Each winter, from December 15 to April 15 along the entire Corsican coastline, you head into the sea to harvest sea urchins, followed by a romantic tasting at sunset with your feet in the sand and the gentle rhythm of the waves in the background.
After a breakfast of local organic products overlooking the sea, accompanied only by the sound of the waves, you ride through the maquis on horseback before heading offshore with Jean, a skipper from the region.
On board a private boat, you meet Marc, a professional fisherman who introduces you to sea urchin harvesting. After a briefing on deck, you put on a wetsuit and dive in on breath-hold to collect the renowned “sea chestnuts.”
Guests may choose to take part in the fishing or simply observe Marc’s precise, skillful work. After a few minutes-or a few hours-underwater, you return to the beach to taste the catch together, in an intimate setting, discovering a seafood delicacy with complex flavors that, as chef Pierre Gagnaire puts it, “is not given, but learned.”
The following day, you continue exploring the region with a journey to the Isolella peninsula, protected by its Genoese tower, and Cap di Sette Nave, a cluster of seven small granite islands that shimmer each evening in the warm glow of the setting sun.
