Once these first points of reference are established, the itinerary takes tangible form along the Burgundy hillsides. Very quickly, the road winds through the Côte de Beaune, revealing a succession of legendary villages and slopes. Here, a few metres are enough to move from a village appellation to a Premier Cru, then to a Grand Cru. Each stop is carefully chosen: directly within the producing parcels or at discreet viewpoints offering rare perspectives. Before each tasting, Mathias invites observation—slope, exposure, soil composition, immediate environment—because a wine is not understood only in the glass, but first in the landscape that gave it life. 

As the journey unfolds, the tasting becomes a living lesson. The notions of climats, appellation hierarchies and village identities are clarified without ever becoming fixed or academic. If the itinerary extends as far as Vosne-Romanée, the reading shifts register. Here, the names resonate like legends. The vines express a different depth—more contained, denser, more structural. Cellars then open in their rarest intimacy: barrel tastings offer an immersion into the alchemy of wines still in the making, revealing the long, patient time of their creation. 

At the end of the experience, one is returned to the hotel, the mind filled with nuances, contrasts and the precision of these exceptional terroirs. More than a tasting, the experience leaves the feeling of having approached Burgundy in what it holds most confidential and most true.
